Pepper Chevre
Tom Bivins2017-12-04T13:15:11-05:00With a creamy, fresh and pillowy texture, our chevre has converted many-a-skeptic over to goat cheese! Our curds are all hand-ladeled which results in the light consistency of our fresh cheeses. We make a pepper crusted chevre, as well as plain and herb crusted. They all pair well with a light white wine, or a lighter beer (though the pepper chevre can hold it’s own with a darker brew).
Gisele
Tom Bivins2017-03-22T14:37:29-04:00Fondly named after our Mom who works behind the scenes but doesn’t want any recognition! Cow and goat’s milk blend, aged 3-5 month whose flavor intensifies as it ages. Swiss style finished with Spiced Apple Cider wash. The spiced cider flavor permeates the cheese perfectly. Melts well. Pairs well with sparkling wines, Merlot, pears and grapes.

Eleven Brothers
Tom Bivins2017-03-22T14:41:47-04:00Named after our eleven brothers-they were a lot of work and so was this cheese. They all turned out great, as did the cheese. Made with goat milk and aged 4-6 months, flavor intensifies as it ages. Washed-rind Tomme style with a buttery flavor, nutty undertones. A symphony of flavors that linger. Pairs well with Cabernet Sauvignon, bold dark fruits, fresh apples and rustic bread.
