Smoked Kashar

Smoked Kashar is made from the same curd as the Kashar and Suffolk Punch and is also aged for at least 2 months.  Instead of going to the cave, Smoked Kashar is taken down the road to Grafton Village Cheese where Vermont apple wood provides a mild smokiness to this smooth and supple cheese.

Smoked Kashar ages for at least 2 months, weighs 4 – 8 pounds, and is available in wedges.  Whole wheels are available by special order.

We have taken our tried and true whole milk feta and added the subtle smoky flavor of our cherrywood chips.  Behold! Cheese bliss. Starting with fresh 100% Vermont whole milk, we create creamy wheels of feta, add a bit of sea salt, and then create a delicate skin of smokiness; a perfect addition to your cheese board.  It slices wonderfully, melts beautifully, and even crumbles well for a new spin on your favorite salad topping.

Maple Smoked Gouda

Raw milk, in the words of Henry ‘The Cheeseman’ Tewksbury, author of Vermont Cheeses, “Even smoked Gouda from Holland…does not compare with the excellence of this local product.” Smoked with maple wood, our farmstead Gouda takes on a new dimension. Milder than hickory-smoked cheeses, this is our most popular cheese and my personal favorite.

Smoked Chevre

Available periodically throughout the summer and fall, is fresh chèvre which has been gently smoked over maple and apple wood from the farm. The smoky flavor is intentionally mild so that the fresh cheese is not overwhelmed.
