Maple Rum Leaf

Hildene Maple Rum Leaf is a soft-ripened, bloomy rind cheese wrapped in maple leaves harvested from Hildene’s property. The leaves are soaked in Mad River Distillery’s Maple Cask Rum before being applied to the cheese. Maple Rum Leaf comes in 4oz rounds made from pasteurized cow milk and aged for 3 weeks. The texture is dense at the center and gooey just beneath the rind. the leaves add a floral, spicy aroma and a hint of sweetness to the rind. Due to the labor intensive nature of this cheese, Maple Rum Leaf is available only in limited quantities from November to March.

Cow Tomme

Hildene Cow Tomme is one of our winter cheeses made from raw milk bought from a nearby dairy. It has a firm texture and a nice balance of bright tartness with a creamy, buttery flavor similar to a mild cheddar. Each finished wheel is 6 to 7 pounds and is aged for at least 6 months. The natural rind adds an earthy note.

Vermont Brebis

Introduced in May 2003, this little gem was awarded the blue ribbon at the prestigious ACS competition in San Francisco three months later! A small round wheel, Vermont Brebis (pr. bray-bee) is olive-y and mushroomy and runny when ripe. Has a luscious mouth feel 6 ounce round (Avail May-Oct)

Introduced in 2001, this small round is in the style of Brin d’Amour with a slightly different herb crust. It is Provence in nature with rich buttery notes and an almost floral finish. Another American Original for Willow Hill Farm! 8 ounce round (Avail. May-Oct)

Spruce

Spruce is a supple, creamy, washed-rind round wrapped and aged in strips of spruce bark harvested by hand on the farm. Made with pasteurized goat’s milk and washed with Alchemist brewery’s famous Heady Topper, Spruce has a surprisingly mellow paste with an unmistakable woodsy zing from the tannins in the spruce bark.

Haiku

Meet our haiku. Little thoughts of cheese. Closely related to Sonnet, Haikus are one-offs that come in a variety of sizes and shapes. Earthy, rich, softly sharp with a subtle tang, this cheese is made with our goat’s delicious milk and is filled with the tastes of our hillside. Seasonally Available in limited editions. $30/lb. Sold by the pound.

This years haiku is a softer, more supple version of sonnet, velvety at the round and perfectly paired with a little plum and fennel chutney. It has been getting rave reviews at market and tastings. It is very very tasty.

Trillium

This cheese is the same as the Marabella but made with goats milk and organic Jersey cows milk.  It is made from October to December.  5-6oz lactic cheese with a geotrichum/p.candidum rind with 2 layers of ash and an ash coated rind. Very mild and a silky texture.
