Squeaky, salty, buttery chunks of fresh “cheddar’d” and milled curds are a farmstead classic. They are best eaten fresh when they still have their squeak, but as they age they become more like mild cheddar or mozzarella. They are delicious for snacking, pizza topping, grilled cheese, nachos, and of course poutine!

Farmstead or Farmhouse

Typically, this style was a specific reference to farmhouse cheddar, a cheese which made use of the best cream from the farm where the cheese was being produced.  Thus, it was a special cheese and fetched a premium price.

Now, especially in America, farmhouse style cheeses can refer to a wide variety of styles, as long as the cows, the milk, and the cheese are from the same farm.

Cheese Curd

Farmstead or Farmhouse

Curd flavor is mild, but can differ in taste depending on the process in which it was made. It has about the same firmness and density as a cheese round, but with a springy or rubbery texture. Fresh curds squeak against the teeth when bitten into, a defining characteristic not present in finished cheese, due to air trapped inside the porous material curd itself.

This is a winters cow milk cheese made with organic cows milk.  It is ripened 6 to 8 weeks and brushed 2 times per week. B.Linens are added to the milk thus creating a soft ripened rind with the frequent brushing.  8-10 oz. Supple, texture, sweet almond flavor as the cheese is brined in vodka and amaretto liquor.

A new addition to our line-up.  Goat’s milk Camembert style cheese .  A soft, creamy, surface ripened goat’s milk cheese.   The flavor intensifies as it ages.  This traditional Camembert recipe has the soft, gooey center and is absolutely delicious when drizzled with local raw honey and baked.

A raw goat milk cheese, washed in hard cider from our neighbors across the border in Granville, NY.  Aged just about two months, this cheese is soft near the edges and semi-firm in the center, with sweet grassy notes and a hint of apple lingering on the rind.  Seasonally available only in 2 pound wheels.
