West West Blue

A traditional aged Gorgonzola, West West Blue is made with whole, raw milk from Elm Lea Farm and aged 90 – 180 days. The edible rind surrounds an interior with openings filled with streaks of blue mold, a creamy texture and a spicy, earthy flavor.

International award winner! Meaning ‘cowboy blue’ (vaqueros were the first cowboys from Spain to inhabit the wild west and eventually migrated to our family’s ranch over 160 yrs ago)…This cave ripened blue cheese boasts notes of fresh butter and cream with hints of chocolate at the finish.

Our natural rind blue cheese is aged for approximately three to four months. Made with our organic, unpasteurized cow’s milk, our Blue is as approachable as it is pleasantly complex with a mild Blue bite balanced by sweet caramel and savory meat notes.

Boucher Blue / Vermont Blue Cheese

Smooth, very creamy, and mild, with undertones of chestnuts, sweet hay, and truffles. Based on a French Fourme d’Ambert over the years it has become a true farmhouse cheese, unique to our farm. Serving suggestion: Part of an American Cheese course with sweet fruity wine: its mild character does not conflict as other, more well known blues can. You may serve either of our blue cheeses on a spoon as an amuse-bouche with a drop of Amaretto. An American Cheese Society award-winner.

Jersey Blue

5 lb. wheel, natural rind, whole unprocessed milk, minimal salt is used which can hinder growth of blue flora but allows tremendous flavor development. Is often crumbly, but high butterfat content assures ‘melt in your mouth’ quality.
