Subtly flavored, rustic and savory, our Mixed Drum hangs out in our cellar for a minimum of 4 months to achieve peak deliciousness. As the name suggests, it blends the milk from our goats with that good Ayreshire cow’s milk from the Crawford Family Farm. Equally at home on a Ploughman’s Lunch platter (pickles, mustard, etc.) or paired with dried fruit and a stellar dessert wine. Makes the best grilled cheese of all time.

Belvidere

A lush combination of our own goat’s milk enriched with Jersey cream from Butterworks Farm in Westfield, VT, Belvidere is a decadent treat. Belvidere’s yeast-ripened Geotrichum rind imparts a wild, bready aroma and flavor. Aged 3-4 weeks.

Paisley Blue

Paisley is the town in Scotland where some of Neil’s ancestors hail from. This cheese has a bit of the sheep milk sweetness, and the cow milk creaminess. Gentle as blues go.

Trillium

This cheese is the same as the Marabella but made with goats milk and organic Jersey cows milk.  It is made from October to December.  5-6oz lactic cheese with a geotrichum/p.candidum rind with 2 layers of ash and an ash coated rind. Very mild and a silky texture.

French for Good Father.  This is a cow and goat cheese blend aged 3-5 months. A delicious mild and creamy cheese that melts great.

Fondly named after our Mom who works behind the scenes but doesn’t want any recognition! Cow and goat’s milk blend, aged 3-5 month whose flavor intensifies as it ages.  Swiss style finished with Spiced Apple Cider wash.  The spiced cider flavor permeates the cheese perfectly.  Melts well.  Pairs well with sparkling wines, Merlot, pears and grapes.
