DESCRIPTION:Tours run daily 2:00-4:00pm\, except Thursdays!  \nWhere does the story of our delicious farmstead cheddar cheese begin? Join us on a behind-the-scenes tour to uncover the sun to cheese story at Shelburne Farms! \nWatch the cheesemakers in our Farm Barn cheesemaking facility craft our milk into cheddar. Enjoy a guided tasting of our cheddars\, then head to the dairy to meet our Brown Swiss cows and discover how we care for our landscape\, pastures\, and herd. \nAccessibility & Details: This tour will meet at the Farm Store & Welcome Center. You’ll be transported around our campus in an open-air wagon with steps to board. Great for families and groups!  \nBillings Farm is proud to present three delicious varieties of cheeses\, Butter\, Woodstock Reserve and our award-winning Smoked Cheddar. Each is hand-crafted in small batches at the renowned Grafton Village Cheese Company in Grafton\, Vermont. Drawing upon a 150-year tradition of dairy excellence\, including our superior herd quality and high standards of care for our cows\, Billings cheddar is made from 100% raw milk exclusively from the Billings herd of over 40 purebred\, registered Jersey cows.  \nDon’t miss the Farmhouse Scoop Shop\, offering Wilcox ice cream by the scoop\, floats\, specialty sundaes\, and other treats. Billings Farm cheese is available for purchase. Snacks and beverages are also available to enjoy\, with a beautiful view\, from the adjacent slate terrace. We knew from the beginning that the key to making great cheese was great milk. Most of our milk comes from Spring Brook Farm\, a traditional dairy farm that covers 1\,000 acres and maintains a herd of 100 registered Jerseys. Spring Brook Farm is an educational farm\, home to the Farms for City Kids Foundation\, and the cows are closely monitored\, loved and cared for. We also partner with other small family dairy farm in our region. \nMission Statement: Our purpose is to build and support a community that embraces the land that sustains us\, from our unique microbial environment to the Jersey cows that provide the highest quality milk to produce some of the most delicious\, award-winning raw milk cheeses in America.
