Blue Cheeses

Blue cheese offers a distinct bite that is achieved by a harmless mold in the cheese's interior, added during the cheese making process. The milk is inoculated with a specific mold culture, such as Pennicillium Roqueforti, and by treating the curds gently to preserve moisture and a loosely knit texture in the pressed cheese, air pockets remain that encourage an aerobic mold to bloom. Piercing the cheese with needles creates pathways to allow the blue veining to penetrate to the interior.
