Cabot Creamery Cooperative, founded by 94 pioneering dairy farm families in northern Vermont in 1919, has now grown to more than 1,400 farm-family owners throughout New England. Those owner-operators are still dedicated to producing cheddar in the traditional cheese-maker’s time-honored way – with no additives or preservatives – and according to the highest standards of dairy quality. As a consequence, Cabot Cheddars have won every major national and international award for taste since that founding in 1919, including “The World’s Best Cheddar.” 

Now a national brand, with tenfold sales increases in the last twenty years, Cabot Creamery is an exemplar of the cooperative way of doing business – caring about the land its owners farm and the communities in which they live. Cabot’s bottom line measures not only profits, but social responsibility and environmental sustainability. And Cabot Community Programs and Educational Programs – working with business and consumer groups from the National Cooperative Business Association and the Consumer Federation of America to the Good Deeds Foundation and the Girl Scouts of America – have won Cabot even more awards.

The Cabot Visitors Center, at Cabot Village, in Cabot, VT, offers tours of the cheesemaking plant, as well as samples of “The World’s Best Cheddar” in its retail store. The Cabot Waterbury Annex Store, along Vermont Route 100 in the Stowe/Waterbury area, offers samples of hard-to-find and artisanal cheeses from fifteen Vermont cheese makers, including Cabot Creamery’s own national and international-award-winning cheddar. Or, stop by our newest store in Quechee Vermont for a sampling of our cheddars, and other fine Vermont products.  And, of course, Cabot cheeses can be found in retail dairy departments and specialty cheese stores all across the country.

Cow:
Cheddars- The finest cheddar cheese in the world is proudly made by Cabot Creamery in Vermont. Using only pure, fresh milk provided by our farmer-owners, all of Cabot's cheddars are made naturally, without chemicals or preservatives. We let time, gentle care and Mother Nature nurture our cheddars until they are aged for our specific flavor profiles.

Mild - Aged for two to three months, is a creamy cheese- young, fresh, smooth. This versatile cheddar is great for slicing, grilling, or for making a knock-out pizza or an amazing Mac 'n' Cheese. Its kid-friendly flavor is not too sharp and always perfectly tasty.

Sharp - Has won awards around the world for its gutsy, robust flavor. The distinct sharpness that Cabot fans and connoisseurs worldwide have come to love is the result of five to eight months of careful aging.

Extra - Aged gently for nine to fourteen months, Extra Sharp boasts a richness and dense texture that make it an essential ingredient for fondues and party platters. Its full-bodied flavor pairs perfectly with a hearty ale or sturdy wine.

Seriously Sharp After ten months of aging, Hearty enough to satisfy any outdoorsman, this ripe-and-ready cheese is seriously sharp. Its flavor varies from vat to vat, but the quality always remains the same. Just ask the Vermont hunters who've made this a cult classic.

Private Stock It's hard to tell which makes our farmers more proud: how smooth our Private Stock is, or how sharp our Private Stock is. This favorite is aged for up to 18 months to develop its sensational flavor.

Vintage Choice Specially chosen for its complex taste and texture, our Vintage Choice cheddar is aged for up to two full years before receiving its purple wax jacket. Rich, heavy-bodied and boldly flavorful.

50% Reduced Fat Cheddar This delicious, healthy cheese has 50% less calories and fat without sacrificing the great taste of traditional cheddar. A smooth, easy-to-melt addition to any recipe that calls for cheese. Great for snacks, too!

50% Reduced Fat Cheddar with Omega-3 DHA This delicious, healthy cheese with 1/2 the fat of our regular cheddar is now fortified with Omega-3 DHA. Plus, this Omega-3 DHA Cheddar still has the same great taste and meltability as our 50% Reduced Fat Cheddar.

75% Reduced Fat With one quarter the fat, one-third the cholesterol and half the calories of regular cheddar, this cheddar lights the way for those with dietary concerns. Best of all, it tastes 100% cheddar and melts like a dream.

Gourmet Flavored Cheddars
Aged for two months or longer, these sprightly young cheddars provide an ideal backdrop for our popular gourmet flavors. Versatile and varied, these flavored cheddars are perfect for creamy soups or classic canopies, hot hors d oeuvres or simple snacks, quiches or tarts, quesadillas or pizza.

Chipotle This cheese has brought home awards for its smoky-sweet flavor. The caliente kick of red Morita jalapeño chilies combined with the New England mellow of Vermont milk make this a natural for transforming any snack into a smoky sizzler!

Tomato Basil Close your eyes, and the taste is pure Mediterranean. Sun-drenched tomatoes add tartness to the sweetness of the "royal herb." This cheddar, with hints of red and green, looks perfect on any party platter, and is ideal for country French and Italian dishes.

Habanero Ole! Our fieriest chili concoction yet features habanero and jalapeño peppers. Tastebuds and sales have heated up as people discover the flavor that took home top honors as the "Hot Cheese" at the Fiery Food Challenge. Give a boost to burritos and a spice to souffles.

Horseradish The biting pungency of horseradish is foil to our smooth, nuanced, youthful cheddar. For an incredible, tasty zing, pile it high on a baked potato or slice it for grilled meats, sandwiches and side dishes. Pow!

Garlic & Herb A sensational combination of healthful, roasted garlic and minced natural herbs, these two garden favorites blossom in this glorious, flavor-filled mixture.

Tuscan Delizioso! Layers of healthy, tasty Tuscan herbs and spices smother Cabot’s newest classico cheddar. Ideal for snacks, pizza and just pure enjoyment.

Chili-Lime Hand Rubbed Hand-rubbed Chili-Lime spices on the outside give us both of our favorite cheddar experiences in one bar: savory, spicy cheddar on the edges, and creamy delicious regular cheddar in the center. You'll love it!

Monterey Jack With its smooth, nut-like flavor and distinctive taste, this popular, mild-mannered cheese is an ideal alternative to sharp cheddars.

Colby Jack Similar in flavor to mild cheddar, tasty Colby Jack is softer and more elastic in texture, yet ever bit as delicious, as its first cousin. A combination of Monterey Jack and Colby, this smooth, mellow cheese ideal for cooking, nibbling or serving with fruit and crackers.

Pepper Jack Monterey Jack tames the decidedly spicy, jalapeño kick of this colorful, south-of-the-border favorite.

Muenster Mild and mellow, yet wonderfully flavorful, Cabot's Muenster makes a monster hit with those who prefer their cheese on the calm side.
